It is not enough to acquire excellent raw materials from the best fish markets; the execution on the stove and the mastery of the fire are absolutely everything. The process begins with extremely precise pre-cooking. The traditional technique of “scaring” the octopus in boiling water is essential so that the tentacles are tender, achieving that texture that does not resist biting, but maintains enough firmness so as not to fall apart.

Later, the magic of the embers arrives. An intense burst of heat on the grill seals the outside, caramelizing the natural juices of the cephalopod and creating a thin, crispy crust impregnated with smoky notes. This contrast between the gelatinous interior and the toasted exterior is what elevates this dish above the rest.

 

A landscape on the plate: Parmentier, paprika and seaweed

Our grilled octopus does not come alone; it is presented majestically on a soft, rich, and creamy potato parmentier. This puree, worked with premium butter until reaching a silky texture that literally melts in your mouth, acts as a blank canvas that collects all the cooking juices. The tribute to the Spanish gastronomic tradition, especially the Galician one, arrives with the essential touch of La Vera smoked paprika. But at Feroz we always like to take one more step in our menu. To bring freshness and contrast with the earth evoked by the potato and paprika, we crown the dish with a careful selection of seaweed. These provide a deep ocean flavor, salinity, and an additional crunchy touch.
